Beautiful, really. You\u2019re about to leave for work and you\u2019re surprised to discover you\u2019re actually running a bit ahead of schedule for once. <em>Excellent<\/em>, you think. <em>I have just enough time to stop by Cups before I head to the office!<\/em><\/p>\n<p>Every traffic light between you and your closest cafe is green. You arrive between morning rushes, say hello to your favorite barista (you know the one) and order a cup of Guatemalan roast. The aroma hits your nostrils, and right as you take your first sip, you think, <em>Now if only <\/em>everything<em> today could be this easy!<\/em><\/p>\n<p>Want to know a secret? A whole lotta work went into <em>making<\/em> it that easy. That\u2019s where Shawn Rogers comes in.<\/p>\n<p>Shawn wears two hats at Cups\u2014he\u2019s both our Vice President of Operations and our coffee roaster. If that sounds like a lot of responsibility for one person, well\u2026it is. He\u2019s been with us for about 25 years now, so it\u2019s safe to say he\u2019s proven himself up to the challenge many times over.<\/p>\n<p>Shawn began his Cups journey by working with us part-time while still in college. He began roasting in 1999 and later formalized his training through a series of certifications ranging from purchasing and buying to thermodynamics and heat transfer. \u201cI am not a scientist,\u201d says Shawn, laughing, \u201cbut I listen to the scientists who tell me how it works.\u201d<\/p>\n<p>In short? Shawn knows coffee.<\/p>\n<p>It\u2019s a good thing too. It\u2019s no secret that COVID-19 has done a number on the global supply chain. Because of the lead time involved\u2014coffee takes months to source, sample, and transport\u2014our industry didn\u2019t feel the full effects of the pandemic in the beginning, but that\u2019s since changed.<\/p>\n<p>\u201cWe\u2019ve been buying (our Guatemalan roast) primarily from the Oriflama plantation for a very long time, which is a plantation owned by a couple of sisters,\u201d says Shawn. \u201cIt\u2019s really well done, great quality coffee. But we provide coffee for a dozen coffee shops, plus an online store, wholesale accounts, and so on. So, when I purchase a coffee, it has to be enough to meet that volume.\u201d<\/p>\n<p>With supply chain issues hitting the plantation, Shawn has had to get creative. He\u2019s been working with the same importer for 20 years, and she recommended another source for Cups\u2019 Guatemalan roast. However, Cups\u2019 commitment to sourcing quality beans means Shawn needs to try the coffee himself.<\/p>\n<p>So how does that work? For our new Guatemalan roast, Guatemala Huehuetenango, the process looked something like this:<\/p>\n<p>First, promising batches of Guatemalan roast were shipped to a warehouse in Houston. Once they it arrived, samples of each batch were sent to Shawn\u2014about a pot of coffee\u2019s worth of beans\u2014which he then roasted up to see if they met his exacting standards.<\/p>\n<div id=\"attachment_217163\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-217163\" class=\"wp-image-217163 size-medium\" src=\"https:\/\/cupsespressocafe.com\/wp-content\/uploads\/2022\/08\/image-47-300x199.png\" alt=\"Photo of Roaster\" width=\"300\" height=\"199\" \/><p id=\"caption-attachment-217163\" class=\"wp-caption-text\">Our warehouse roaster prepares a new batch of fresh coffee<\/p><\/div>\n<p>\u201cIf it\u2019s something I approve,\u201d says Shawn, \u201cthen they\u2019ll move it to our warehouses in New Orleans where I store all my coffee. I have hundreds and hundreds of bags of coffee in New Orleans because I can&#8217;t store them up here. And about once a month, I get a truck brought up from New Orleans with all the coffee I need.\u201d<\/p>\n<p>So, just to recap: The <em>sample<\/em> needs to be shipped, roasted, tasted, and approved before the \u201creal\u201d work even begins.<\/p>\n<div id=\"attachment_217172\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/cupsespressocafe.com\/wp-content\/uploads\/2022\/08\/cupswarehouse-16-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-217172\" class=\"wp-image-217172 size-medium\" src=\"https:\/\/cupsespressocafe.com\/wp-content\/uploads\/2022\/08\/cupswarehouse-16-300x200.jpg\" alt=\"Warehouse Photo 2\" width=\"300\" height=\"200\" \/><\/a><p id=\"caption-attachment-217172\" class=\"wp-caption-text\">Roastery expert preparing shipping labels<\/p><\/div>\n<p>After a few samples were tested for quality and taste, Guatemala Huehuetenango was chosen as our new Guatemala origin coffee. Give yourself a mental high five for your discriminating taste and raise your mug to Shawn.
